Each week, 1Aisle highlights seasonal produce that you can buy in bulk locally and use throughout the the week. This week we highlight our favorite October root vegetable: the beet!
According to this article from The World’s Healthiest Foods, the beet is a 2-in-1 vegetable. At peak season (late summer, autumn), the root portion, when cooked, has great flavor, is soft and buttery, and is quite inexpensive. The unheralded mineral-rich greens are also delicious and can be prepared just like their cousins spinach and Swiss chard.
